MIKI'S MAGICAL MATCHA BITES

Our friend Michaela Lemkes spoils us during Matcha Wednesday by meeting us on the beach for sunrise with all sorts of matcha treats in tow! Miki's magical matcha bites are one of our fave "Miki Creations." Trust us, it's the perfect healthy treat for the summer months. 

Ingredients:

  • Matcha Wednesday matcha powder

  • Coconut yoghurt

  • Maple syrup

  • Banana (sliced)

  • Crunchy peanut butter. We prefer the organic variety without nasty fillers!

  • Chocolate (melted). The darker the chocolate, the better the health benefits!

  1. Combine coconut yoghurt with Matcha Wednesday matcha powder and a dash of maple syrup. The trick is to add the matcha powder and maple syrup in smaller teaspoon amounts to ensure you don't make it too strong or too mild. Taste test until you are happy with the level of matcha flavour and added sweetness.

  2. Arrange mixture into bite sized blobs on baking paper spread out on a plate or baking tray.

  3. Top each bite sized blob with a slice of banana, and a little dollop of crunchy peanut butter.

  4. Freeze for 1 hour.

  5. Once matcha bites are frozen, melt chocolate and dribble melted chocolate on top of the frozen bites. Sprinkle with your choice of chopped nuts.

  6. Freeze until serving.

  7. Consume before they melt! We won't judge you for licking your fingers after these ones.
