jenna's matcha muffins

On occasion, Jenna will show up to Matcha Wednesday mornings at the beach with these matcha muffins and it makes the early 5am wake up call so much sweeter! Best enjoyed with friends, together with a hot matcha latte, while waiting for the sun to rise.

  • 1 tbsp of Matcha Wednesday matcha powder

  • 3/4 cup oat flour (blend old fashioned oats)

  • 1/4 cup coconut flour

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • pinch of sea salt

  • 2 tbsp of honey (optional for sweetener can sub maple syrup)

  • 1/4 cup nut butter (peanut or almond butter)

  • 2 ripe bananas 

  • 2 eggs

  • 1 tsp vanilla

  • optional: Chocolate chips or blueberries!

  1. Mix dry ingredients together first.

  2. Add remainder of ingredients together until it reaches a thick batter-like consistency.

  3. Bake at 170 for 20-25 minutes.

  4. Enjoy your matcha muffins with a cup of coconut matcha!
